Ingredients

Scale

Truffle Base

  • 10 oz. dark chocolate, chopped small
  • ⅔ cups heavy whipping cream (or full fat coconut cream for dairy free)
  • 3 Tbsp amaretto liqueur
  • ½ tsp almond extract

Coating

  • 1/3 cup cocoa powder

Instructions

  1. Prepare the chocolate: Place the chopped dark chocolate in a medium-sized bowl, ensuring it is ready for melting once the cream is heated.
  2. Heat the cream: In a saucepan over medium heat, add the heavy whipping cream or coconut cream, stirring frequently and bringing it to a gentle simmer at about 185°F. Avoid overheating to prevent burning.
  3. Combine cream and chocolate: Pour the hot cream over the chopped chocolate and stir continuously until the mixture is smooth and creamy, fully melting the chocolate.
  4. Add flavorings: Stir in the amaretto liqueur and almond extract until the mixture is thoroughly blended and velvety.
  5. Chill the mixture: Cover and chill the mixture in the refrigerator for about 4 hours until firm enough to scoop and shape.
  6. Shape the truffles: Using a cookie scoop, portion the chilled mixture into approximately 1-inch balls. To prevent stickiness, roll each ball lightly in your hands, optionally spraying your palms with a little oil.
  7. Coat the truffles: Roll each truffle ball in cocoa powder to coat evenly. You can also use sprinkles or chopped nuts as alternative coatings.

Notes

  • Ensure cream is heated to approximately 185°F to properly melt the chocolate without burning it.
  • For extra indulgence, coat chilled truffles in melted chocolate by dipping them; ensure they are well chilled or frozen for an hour before dipping.
  • These truffles contain alcohol from the amaretto, making them unsuitable for children. To make kid-friendly truffles, omit the amaretto and double the almond extract instead.
