Ingredients

Scale

Lasagna Roll-Ups

  • 12 lasagna noodles
  • 1 pound ground turkey
  • 1 cup ricotta cheese
  • 2 cups shredded mozzarella cheese, divided
  • 1/4 cup grated Parmesan cheese
  • 1 egg, beaten
  • 1 teaspoon garlic powder
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • Salt and pepper to taste

Sauce

  • 2 cups marinara sauce

Instructions

  1. Preheat the oven: Preheat your oven to 375 degrees F (190 degrees C) to prepare for baking the roll-ups.
  2. Cook the noodles: Cook the lasagna noodles according to the package instructions until al dente. Drain them well and lay them flat on a piece of parchment paper to prevent sticking.
  3. Cook the turkey: In a large skillet over medium heat, cook the ground turkey, breaking it apart as it cooks, until it is no longer pink. Drain any excess fat from the skillet.
  4. Make the filling: In a mixing bowl, combine ricotta cheese, 1 cup of shredded mozzarella cheese, grated Parmesan, beaten egg, garlic powder, dried basil, dried oregano, salt, and pepper. Stir in the cooked ground turkey until the mixture is well combined.
  5. Assemble the roll-ups: Spread a thin and even layer of the turkey and cheese mixture onto each lasagna noodle. Carefully roll each noodle lengthwise and place them seam-side down in a baking dish to keep them intact.
  6. Add the sauce: Pour marinara sauce evenly over the arranged roll-ups, ensuring each one is well coated for moisture and flavor.
  7. Top with cheese: Sprinkle the remaining 1 cup of shredded mozzarella cheese over the top of the sauced roll-ups.
  8. Bake covered: Cover the baking dish with aluminum foil and bake in the preheated oven for 20 minutes to heat through and melt the cheeses.
  9. Bake uncovered: Remove the foil and bake for an additional 15 minutes until the cheese topping is bubbly and golden brown.
  10. Serve: Allow the roll-ups to cool for a few minutes after baking, then serve warm with your favorite side or salad.

Notes

  • Make sure to cook the noodles just until al dente to avoid them becoming too soft when baked.
  • You can substitute ground turkey with ground chicken or lean ground beef if preferred.
  • For extra flavor, add chopped fresh parsley or spinach to the filling mixture.
  • Using no-boil noodles can save time, just adjust cooking times accordingly.
  • Leftovers can be stored covered in the refrigerator for up to 3 days or frozen for up to 2 months.
