Instructions

  1. Prepare the Onions: Preheat your oven to 425°F (220°C). Peel the onions carefully and slice each one in half vertically to expose their layers.
  2. Make the Roasting Mixture: In an ovenproof casserole dish, combine the butter and olive oil. Whisk in the balsamic vinegar, dry white wine, sugar, salt, and pepper until well blended to create the flavorful roasting liquid.
  3. Arrange and Roast the Onions: Place the onion halves cut side down in a single layer in the casserole dish. Cover the dish with aluminum foil and roast in the preheated oven for 20 minutes to start softening and caramelizing the onions.
  4. Flip and Baste: After 20 minutes, carefully flip each onion half over and baste them with the pan juices to help them brown evenly and remain moist.
  5. Finish Roasting: Return the casserole dish to the oven uncovered. Continue roasting for another 20-25 minutes until the onions are tender, deeply browned, and caramelized to perfection.
  6. Serve: Remove the roasted onions from the oven and serve warm or at room temperature. Garnish with freshly chopped parsley, thyme, or oregano to add a vibrant herbal note.
