Ingredients

Scale

Crust

  • 1 ½ cups graham cracker crumbs
  • ½ cup (1 stick) butter, melted

Cheesecake Filling

  • 16 oz cream cheese, softened
  • 1 cup sugar
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 2 medium ripe bananas, mashed
  • 1 package (3.4 oz) banana pudding mix

Topping and Garnish

  • 2 cups whipped cream
  • Banana slices for garnish

Instructions

  1. Prepare the crust: In a bowl, mix the graham cracker crumbs with the melted butter until the crumbs are moistened. Press this mixture evenly into the bottom of a baking dish. Bake the crust for 10 minutes at 350°F (175°C) to set, then remove and let cool slightly.
  2. Make the cheesecake filling: Beat the softened cream cheese with an electric mixer until smooth and creamy. Gradually add sugar, mixing well. Add eggs one at a time, mixing after each addition, then blend in vanilla extract and the mashed bananas until fully incorporated.
  3. Add banana pudding mix: Sprinkle the banana pudding mix over the cream cheese mixture and gently fold it in until the batter is smooth and uniform in texture.
  4. Bake the filling: Pour the prepared cheesecake filling over the cooled crust, spreading it evenly. Bake at 350°F (175°C) for 30 to 35 minutes, or until the edges are set but the center still has a slight jiggle to it.
  5. Cool and chill: Allow the cheesecake bars to cool at room temperature for 30 minutes. Then cover and refrigerate for a minimum of 4 hours or overnight to fully set and develop flavor.
  6. Serve: Before serving, top the bars with whipped cream and garnish with fresh banana slices for an appealing presentation and added flavor.

Notes

  • Ensure the cream cheese is softened to room temperature for a smooth filling without lumps.
  • For best texture, do not overbake; the center should remain slightly jiggly before cooling.
  • Use ripe bananas for the best natural sweetness and flavor.
  • These bars can be stored covered in the refrigerator for up to 4 days.
  • To make the whipped cream topping from scratch, whip heavy cream with a bit of sugar until stiff peaks form.
