  • 1 pound beets, washed with the greens removed and the ends cut off (about 5 medium beets)
  • 1 large cucumber or 34 small cucumbers
  • 1 bunch flat-leaf parsley
  • 1 1-inch knob of fresh ginger

  • 1 apple
  • 1 lemon or lime (skin removed)

Instructions

  1. Prepare the produce: Wash all vegetables and fruits thoroughly. Remove and discard the beet greens and the ends of the beets. Peel the skin off the lemon or lime as well as the fresh ginger. Chop the produce into pieces small enough to fit into the juicer’s feeder tube or blender.
  2. Juicing: If using a juicer, feed the chopped vegetables and fruits through the juicer, alternating between harder and softer pieces to facilitate smooth juicing. This helps extract maximum juice and prevents clogging.
  3. Blending: If using a blender, add all the chopped ingredients into a high-speed blender. Add 1/2 cup of water to help blend, then secure the lid tightly. Blend until the mixture is smooth and well combined.
  4. Strain (if blended): Pour the blended mixture through a nut milk bag or a fine strainer into a large bowl to separate the juice from the pulp, ensuring a smooth juice texture.
  5. Serve or store: Serve the fresh beet juice immediately to enjoy its vibrant flavor and nutrients. Alternatively, store it in a covered container in the refrigerator and consume within 48 hours for best freshness.
