Ingredients

Scale

Dry Ingredients

  • 1 ½ cups all-purpose flour or gluten free substitute
  • 1 ½ cups quick oats
  • ½ teaspoon salt
  • 1 teaspoon baking powder
  • ⅓ cup coconut sugar or granulated sugar

Wet Ingredients

  • ½ cup coconut oil, melted
  • ⅓ cup maple syrup
  • ½ cup raspberry preserves

Instructions

  1. Preheat and Prepare Pan: Preheat your oven to 350°F. Spray an 8×8 inch baking pan with non-stick spray and set it aside to get ready for the batter.
  2. Mix Dry and Wet Ingredients: In a large bowl, combine all the ingredients except the raspberry preserves. Mix well until a uniform dough forms.
  3. Press Base Layer: Using your hands, press about two-thirds of the mixture evenly and relatively flatly into the bottom of the prepared pan.
  4. Add Raspberry Layer: Gently spread the raspberry preserves over the pressed base layer, leaving a half-inch border around the edges to prevent scalding during baking.
  5. Top With Crumble: Crumble the remaining one-third of the mixture evenly over the raspberry layer. Lightly press the crumbles so they stick and hold together after baking.
  6. Bake: Place the pan on the center rack of the oven and bake for 25 to 30 minutes until the top is lightly browned and set.
  7. Cool and Serve: Remove from oven and let the bars cool in the pan on top of a cooling rack. Once cooled, cut into bars and serve.

Notes

  • For a gluten-free option, substitute all-purpose flour with a gluten-free flour blend.
  • Pressing the mixture evenly helps ensure uniform baking and texture.
  • Leaving a border when spreading preserves prevents burning around the edges.
  • Store bars in an airtight container at room temperature for up to 3 days or refrigerate for up to a week.
  • These bars make a perfect grab-and-go breakfast or a healthy snack throughout the day.
