Instructions

  1. Prepare Your Pan & Ingredients: Line a 9×13-inch baking dish or baking sheet with parchment paper or a silicone mat. Measure and have all ingredients ready as the toffee-making process is quick and requires constant attention.
  2. Make the Toffee Base: In a heavy-bottomed saucepan over medium heat, melt the butter, sugar, salt, and water while stirring constantly with a wooden spoon or silicone spatula. Continue stirring and cooking until the mixture reaches a deep golden brown color and hits 300°F (hard crack stage) on a candy thermometer, about 10 to 15 minutes. Remove from heat and gently stir in the vanilla extract.
  3. Pour & Spread: Immediately pour the hot toffee mixture onto your prepared baking sheet. Use a spatula to spread it evenly. Let it sit for 1-2 minutes until it begins to firm up slightly but is still warm.
  4. Add the Chocolate: Sprinkle the chocolate chips evenly over the warm toffee surface. Wait about 2 minutes to allow the chocolate to melt, then use a spatula to spread the melted chocolate smoothly over the toffee.
  5. Sprinkle the Nuts: While the chocolate is still melted, evenly sprinkle chopped nuts on top and gently press them into the chocolate so they adhere well.
  6. Let It Set & Break Into Pieces: Allow the toffee to cool at room temperature for 2 hours or speed up setting by chilling it in the fridge for 30 minutes. Once hardened, break the toffee into bite-sized pieces and enjoy.
