Chocolate Mixture
- 2 cups (340 g) white chocolate chips
- 1 ¼ cup (370 g) cookie butter
- 16 tablespoons salted butter
- 1 teaspoon vanilla extract
Dry Mix and Coating
- 11 cups rice Chex or corn Chex (1, 12-ounce box)
- 2 ½ cups powdered sugar (divided)
- ½ teaspoon cinnamon (divided)
- 1 ½ cups broken Biscoff cookies (divided)
- Prepare Baking Sheets and Bags: Place a piece of parchment paper on 2 rimmed baking sheets and set aside. Evenly divide the powdered sugar, cinnamon, and broken Biscoff cookies into 2 gallon-sized zipper-top bags: 1 ¼ cups powdered sugar, ¼ teaspoon cinnamon, and ¾ cup cookie pieces in each bag. Shake each bag well to mix and set aside.
- Melt Chocolate Mixture: In a microwave-safe bowl, combine white chocolate chips, cookie butter, and salted butter. Microwave in 15-second intervals, stirring thoroughly between each until the mixture is fully melted and smooth but not overcooked.
- Add Vanilla Extract: Stir in the vanilla extract into the melted mixture. Note that this mixture will be thicker and less smooth than traditional muddy buddy coatings because of the cookie butter and white chocolate properties.
- Coat the Cereal: Place the rice or corn Chex cereal in a very large mixing bowl. Pour the melted chocolate mixture over the cereal. Using a rubber spatula, gently lift and fold the cereal from the bottom to coat evenly, being careful not to crush or break the cereal pieces.
- Divide and Shake with Powdered Sugar Coating: Add half of the coated cereal into each of the prepared powdered sugar mixture bags. Seal the bags tightly and gently shake, tipping upside down to ensure every piece gets a full coating of the powdered sugar, cinnamon, and cookie crumbs.
- Cool and Store: Dump the coated muddy buddies onto the prepared parchment-lined baking sheets. Spread evenly and break up any large clumps. Allow them to cool completely at room temperature for about 10-15 minutes before transferring to an airtight container or fresh zipper-top bags for storage.
