Ingredients

Scale

For the Dough:

  • 1 1/2 cups warm water (110°F is ideal for activating yeast)
  • 1 tsp kosher salt
  • 2 tbsp granulated sugar
  • 1 tbsp instant yeast (SAF-Instant yeast recommended)
  • 2 tbsp unsalted butter (room temperature, about 70°F)
  • 4 cups all-purpose flour (King Arthur all-purpose flour works great)

For the Topping and Baking:

  • 6 tbsp unsalted butter (melted and cooled slightly)
  • 3 garlic cloves (freshly grated)
  • 1/4 cup Parmesan cheese (finely grated)
  • 1 tbsp chopped parsley (optional, for color and freshness)
  • More kosher salt (for sprinkling before baking)

Instructions

  1. Prepare the Yeast Mixture: In the bowl of a stand mixer fitted with the dough hook, combine 1 1/2 cups warm water (110°F), 1 tbsp instant yeast, and 2 tbsp granulated sugar. Stir and let stand for about 5 minutes until creamy, activating the yeast for fluffy rolls.
  2. Make and Knead the Dough: Add 2 tbsp room temperature unsalted butter, 4 cups all-purpose flour, and 1 tsp kosher salt to the yeast mixture. Mix on low until just combined, then increase speed to medium and knead for about 5 minutes until smooth, elastic, and making a slapping noise against the bowl.
  3. Let the Dough Rise: Remove the dough bowl from the mixer, cover with a dish towel, and let it rise in a warm spot until doubled in size, about 20 to 30 minutes, using a warmer environment for cooler kitchens.
  4. Prepare Garlic Butter and Baking Pans: Melt 6 tbsp unsalted butter over low-medium heat, add 3 grated garlic cloves, cook gently until fragrant without browning. Brush half the garlic butter over two cake pans or a 9×13-inch baking dish. Reserve remaining garlic butter for later.
  5. Shape and Arrange the Dough Balls: Turn the risen dough onto a floured surface, shape into a smooth ball. Cut into 16 equal pieces and roll each into a round ball. Place balls in the garlic butter-brushed pans evenly.
  6. Second Rise and Bake Rolls: Preheat oven to 400°F (200°C). Let the dough balls rise near the warm oven for an additional 15 minutes. Bake rolls for 15 minutes until lightly golden. Remove from oven, brush with reserved garlic butter, sprinkle 1/4 cup grated Parmesan cheese and kosher salt over the tops. Return to oven and bake 3 to 5 more minutes until deep golden and cooked through.

Notes

  • Make sure water temperature is between 105°F and 115°F to properly activate yeast without killing it.
  • Use room temperature butter to ensure it incorporates smoothly into the dough.
  • Allowing the first rise to fully double the dough ensures light and fluffy texture.
  • Freshly grated garlic provides the best flavor contrast in the garlic butter topping.
  • Optional parsley adds a fresh, vibrant color for serving presentation.
  • If your kitchen is cool, you can place dough near a slightly warm (not hot) oven to encourage rising.
