Instructions

  1. Prepare the Cherry Mixture: In a saucepan, combine the pitted and halved cherries with granulated sugar, lemon juice, and Amaretto liqueur. Cook over medium heat for 5 to 7 minutes, stirring occasionally until the cherries soften and release a slightly thick, syrupy consistency. Remove the pan from heat and allow the cherry mixture to cool completely before assembling.
  2. Whip the Mascarpone Cream: In a large mixing bowl, whip the cold heavy cream until soft peaks form. In a separate bowl, whisk together the room temperature mascarpone cheese, powdered sugar, and vanilla extract until smooth and creamy. Gently fold the whipped cream into the mascarpone mixture, combining thoroughly yet maintaining a light, fluffy texture.
  3. Mix the Espresso Layer: Combine the cooled brewed espresso or strong coffee with Amaretto liqueur in a shallow dish suitable for dipping ladyfingers. Stir to blend the flavors evenly.
  4. Assemble the Tiramisu: Briefly dip each ladyfinger biscuit into the espresso-Amaretto mixture for 1 to 2 seconds per side, just long enough to soak without becoming soggy. Arrange a single layer of dipped ladyfingers at the bottom of an 8×8-inch dish or individual trifle glasses. Spoon half of the mascarpone cream over the ladyfingers, followed by an even layer of half the cooled cherry mixture. Repeat the layering process with the remaining dipped ladyfingers, mascarpone cream, and cherries to create a beautiful multi-layered dessert.
