  • ¼ cup canned or homemade pumpkin purée

Instructions

  1. Prepare walnuts: Place ⅓ cup of the walnuts in a food processor fitted with a metal blade and process until they resemble coarse sand. Transfer to a small bowl and set aside for rolling later.
  2. Grind remaining walnuts: Add the remaining walnuts to the food processor and process until finely ground, creating a finer texture for the dough.
  3. Combine main ingredients: Add the pitted dates, pumpkin purée, unsweetened cocoa powder, pinch of sea salt, and vanilla extract to the finely ground walnuts in the processor. Continue processing until all ingredients are combined into a smooth, sticky mixture.
  4. Form balls: Using a spoon or your hands, scoop the mixture and roll it into 8 equal golf-ball-sized balls.
  5. Coat the balls: Roll each ball in the reserved coarsely chopped walnuts to add texture and a nutty finish.
