Ingredients

Scale

Base and Filling

  • Two (2) cans (8 counts each) refrigerated cinnamon rolls (with icing packets reserved)
  • 1/2 cup (1 stick) unsalted butter, melted
  • 1/2 cup packed light brown sugar
  • 1 teaspoon vanilla extract

Glaze

  • Reserved icing packets from cinnamon rolls
  • 2 ounces cream cheese, softened
  • 1/2 cup powdered sugar

Instructions

  1. Preheat and Prepare Pan: Preheat the oven to 350°F (175°C). Line a 9×13 inch baking pan with parchment paper, letting the paper overhang the sides to make removal easier later.
  2. Make the Base Mixture and Layer: In a medium bowl, mix the melted butter, brown sugar, and vanilla extract until well blended. Unroll and slightly flatten half of the cinnamon rolls (8 rolls) and press them evenly into the bottom of the prepared baking pan, creating a cohesive base layer.
  3. Add Filling and Top Layer: Pour the butter and brown sugar mixture evenly over the flattened cinnamon roll base. Then arrange the remaining 8 cinnamon rolls side-by-side on top of this layer across the pan.
  4. Bake: Bake the assembled bars for 25 to 30 minutes or until the edges are golden brown and the center is fully set.
  5. Prepare Glaze: While the bars cool slightly, combine the reserved icing packets, softened cream cheese, and powdered sugar in a small bowl. Whisk vigorously until smooth, thick, and lump-free.
  6. Glaze and Cool: Drizzle the cream cheese glaze liberally over the warm bars, ensuring even coverage. Let the bars cool completely. Use the parchment paper to lift them out of the pan, then cut into squares for serving.

Notes

  • Store leftovers in an airtight container in the refrigerator for up to 4 days as the cream cheese glaze requires refrigeration for food safety.
  • For a gooey texture, reheat individual servings in the microwave for 10 to 15 seconds to soften the glaze and tenderize the base.
  • Serve warm with vanilla bean ice cream or a drizzle of caramel sauce for an indulgent dessert experience.
  • Press the first layer of flattened cinnamon rolls firmly into the pan with the back of a measuring cup to eliminate gaps and ensure the filling doesn’t seep through.
