Ingredients

  • 4 oz cream cheese or coconut butter
  • 2 tbsp butter, or additional coconut butter
  • 3 tbsp powdered sugar or erythritol
  • 1/2 tsp instant coffee
  • 3 oz chocolate chips or broken up chocolate (optional)

Instructions

  1. Step 1: Bring the cream cheese (or coconut butter) and butter (or additional coconut butter) to room temperature until soft.
  2. Step 2: Combine all ingredients, including powdered sugar and instant coffee, until smooth. Using a hand mixer provides the smoothest texture, but stirring with a fork also works.
  3. Step 3: Spread the mixture into a container, or freeze for a few minutes until firm enough to scoop into balls using a mini cookie scoop onto a parchment-lined plate.
  4. Step 4: Freeze the truffles until firm.
  5. Step 5: If desired, melt the chocolate and dip the truffles. For a smoother sauce, stir in half a teaspoon of oil into the melted chocolate (optional).
  6. Step 6: Once the chocolate sets, cut the truffles in half if you prefer smaller bites like in the photos.
  7. Step 7: Store leftovers in the refrigerator or freezer.

Tips & Variations

  • Use coconut butter for a dairy-free version with a slight coconut flavor.
  • Adjust the instant coffee amount to taste for a stronger or milder coffee flavor.
  • For a smooth chocolate coating, adding a little oil to melted chocolate helps with texture and shine.
  • Try rolling the truffles in cocoa powder, chopped nuts, or shredded coconut for extra texture.

Storage

Store the coffee truffles in an airtight container in the refrigerator for up to one week or in the freezer for up to one month. To enjoy, simply let refrigerated truffles sit at room temperature for a few minutes before serving. If frozen, thaw in the refrigerator before eating.

How to Serve

The image shows a close-up of peanut butter balls cut in half and stacked on top of each other. Each piece has two layers: a thick, smooth, light brown peanut butter filling on the inside, covered by a thin, glossy dark brown chocolate shell on the outside. In the background, more whole and halved peanut butter balls are slightly out of focus, all placed on a white marbled surface. The texture of the peanut butter filling looks creamy and dense while the chocolate shell appears firm and shiny. photo taken with an iphone --ar 4:5 --v 7

FAQs

Can I use a sugar substitute instead of powdered sugar?

Yes, powdered erythritol or another finely ground sugar substitute works well to keep the truffles sweet without added sugar.

What if I don’t have instant coffee?

You can use finely ground espresso powder or a small amount of strong brewed coffee reduced to a paste. Just be careful not to add too much liquid that could change the texture.

Main Ingredients

  • 4 oz cream cheese or coconut butter
  • 2 tbsp butter, or additional coconut butter
  • 3 tbsp powdered sugar or erythritol
  • 1/2 tsp instant coffee
  • 3 oz chocolate chips or broken up chocolate (optional)

Instructions

  1. Prepare Ingredients: Bring the cream cheese (or coconut butter) and butter (or additional coconut butter) to room temperature so that they are soft and easy to mix.
  2. Mix Ingredients: Combine all the main ingredients, including powdered sugar and instant coffee, until smooth. Use a hand mixer for the creamiest texture, or stir with a fork if needed. Optionally, fold in the chocolate chips if you want them melted in.
  3. Shape the Truffles: Spread the mixture into a container for bars or squares, or freeze for a few minutes until firm enough to scoop. Use a mini cookie scoop to form balls and place them on a parchment-lined plate.
  4. Freeze Truffles: Freeze the balls until completely firm before proceeding further.
  5. Optional Chocolate Dip: Melt the chocolate chips for dipping. For a smoother chocolate coating, stir in half a teaspoon of oil after melting. Dip the truffles in the melted chocolate and let the chocolate set.
  6. Cut and Serve: Once the chocolate sets, cut the truffles in half if desired to create bite-sized pieces like in the photos.
  7. Storage: Refrigerate or freeze any leftovers to maintain freshness and texture.

Notes

  • Room temperature ingredients ensure the smoothest truffle mixture.
  • Using a hand mixer results in a creamier texture but stirring by hand works as well.
  • If you want vegan truffles, use coconut butter exclusively and a plant-based powdered sugar substitute.
  • Dipping in chocolate is optional but adds a lovely finish to the truffles.
  • Freeze the truffles before shaping or serving to make handling easier.
  • Store truffles in the refrigerator or freezer to keep them firm and fresh.
