Main Ingredients
- 4 oz cream cheese or coconut butter
- 2 tbsp butter, or additional coconut butter
- 3 tbsp powdered sugar or erythritol
- 1/2 tsp instant coffee
- 3 oz chocolate chips or broken up chocolate (optional)
- Prepare Ingredients: Bring the cream cheese (or coconut butter) and butter (or additional coconut butter) to room temperature so that they are soft and easy to mix.
- Mix Ingredients: Combine all the main ingredients, including powdered sugar and instant coffee, until smooth. Use a hand mixer for the creamiest texture, or stir with a fork if needed. Optionally, fold in the chocolate chips if you want them melted in.
- Shape the Truffles: Spread the mixture into a container for bars or squares, or freeze for a few minutes until firm enough to scoop. Use a mini cookie scoop to form balls and place them on a parchment-lined plate.
- Freeze Truffles: Freeze the balls until completely firm before proceeding further.
- Optional Chocolate Dip: Melt the chocolate chips for dipping. For a smoother chocolate coating, stir in half a teaspoon of oil after melting. Dip the truffles in the melted chocolate and let the chocolate set.
- Cut and Serve: Once the chocolate sets, cut the truffles in half if desired to create bite-sized pieces like in the photos.
- Storage: Refrigerate or freeze any leftovers to maintain freshness and texture.
