Instructions

  1. Prepare the Apples: Peel, core, and dice the apples into small pieces approximately 1/4 inch (about 1/2 cm) cubes for even cooking and texture in the jam.
  2. Macerate the Fruit: Toss the diced apples with lemon juice and sugar. Stir thoroughly so the fruit is evenly coated. Cover and set aside to macerate for at least 2 hours or preferably overnight, allowing the apples to release their juices and absorb the sugar.
  3. Cook the Jam: Place the macerated apple mixture and fresh cranberries into a jam pot. If canning, prepare your water bath canner before you start cooking. Cook over medium-high heat, stirring frequently, until the mixture thickens. This usually takes about 6 to 10 minutes. The jam is ready when cranberries have popped and fallen apart, while apple chunks remain mostly intact.
  4. Jar the Jam: Remove the pot from heat and immediately ladle the hot jam into sterilized jars, leaving a 1/4-inch headspace for expansion.
  5. Process Jars for Canning: If canning, process the filled jars in a boiling water bath canner for 10 minutes (increase to 15 minutes if you are above 6,000 feet elevation) to ensure safe preservation.
  6. Cool and Store: Allow jars to cool completely on a towel-lined surface. Check that the lids have sealed properly; store sealed jars in the pantry. Any unsealed jars should be refrigerated and consumed promptly. Always refrigerate after opening.
