These Crispy Cottage Cheese Delights are savory, protein-packed patties that are golden-brown on the outside and tender inside. Made with full-fat cottage cheese, Parmesan, herbs, and spices, then coated with breadcrumbs and pan-fried to crispy perfection. They make a delicious appetizer, snack, or light meal served with Greek yogurt or your favorite spicy sauce.

Ingredients

Scale

For the Delights:

  • 1½ cups full-fat cottage cheese
  • 1 large egg
  • ¼ cup grated Parmesan cheese
  • ¼ cup all-purpose flour (or chickpea flour for gluten-free option)
  • 2 tbsp finely chopped green onions
  • 1 tbsp chopped fresh parsley or dill
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • ½ tsp baking powder
  • Salt and pepper to taste
  • ¼ cup breadcrumbs (for coating)

For Frying:

  • 2 tbsp olive oil or vegetable oil

For Serving (Optional):

  • Greek yogurt or sour cream
  • Sriracha, hot sauce, or spicy mayo
  • Fresh herbs for garnish

Instructions

  1. Mix the Ingredients: In a mixing bowl, combine the cottage cheese, egg, grated Parmesan, flour, finely chopped green onions, chopped fresh parsley or dill, garlic powder, onion powder, baking powder, salt, and pepper. Stir the mixture until well combined. The batter will be thick but soft, perfect for shaping.
  2. Shape the Patties: Using a spoon, scoop about 2 tablespoons of the mixture and gently form it into a small patty. Repeat this with the remaining mixture to make approximately 10 to 12 patties. Lightly coat each patty in breadcrumbs to add extra crunch when cooked.
  3. Pan-Fry Until Golden: Heat 2 tablespoons of olive or vegetable oil in a non-stick skillet over medium heat. Place the patties in a single layer without overcrowding the pan. Cook them for 3 to 4 minutes on each side until they become golden brown and crispy. Once cooked, transfer the patties to a paper towel-lined plate to drain any excess oil.
  4. Serve & Enjoy: Serve the crispy cottage cheese delights warm. Accompany them with a dollop of Greek yogurt, sour cream, or your favorite dipping sauce like sriracha or spicy mayo. Garnish with fresh herbs and a light sprinkle of sea salt if desired for enhanced flavor.

Notes

  • For a gluten-free option, substitute all-purpose flour with chickpea flour and use gluten-free breadcrumbs.
  • Ensure the oil is hot but not smoking when frying to achieve a perfect crispy exterior without burning.
  • These patties can be kept warm in a low oven while you finish frying the rest.
  • Try adding different fresh herbs like chives or cilantro for varied flavors.
  • Leftovers can be refrigerated and gently reheated in a skillet or oven to retain crispiness.
