Ingredients

Scale

For the Pasta

  • 10 oz fettuccine pasta or pasta of choice
  • Salt to taste (for pasta water)

For the Alfredo Sauce

  • 1 cup cottage cheese (nonfat preferred, 2% or 4% also works)
  • 1 tablespoon butter
  • 3 garlic cloves, minced
  • 1/4 cup parmesan cheese, grated
  • 1/2 teaspoon ground black pepper
  • 1/2 cup chilled milk (unsweetened almond milk recommended)
  • Salt to taste (for sauce)

For Garnish

  • Grated parmesan cheese
  • Fresh parsley

Instructions

  1. Cook the Pasta: Bring a large pot of salted water to a boil. Add 10 oz fettuccine pasta and cook according to package instructions until al dente. Drain the pasta and let it sit for about 5 minutes to cool slightly.
  2. Prepare Ingredients for Sauce: Place 1 cup cottage cheese into a medium bowl. In a separate small bowl, combine 1 tablespoon butter and 3 minced garlic cloves. Microwave both bowls for 30 to 45 seconds. If the butter is not fully melted and bubbly, heat for an additional 30 seconds. Alternatively, sauté the garlic in butter in a pan until fragrant.
  3. Blend the Sauce: Add the microwaved butter and garlic mixture, cottage cheese, 1/4 cup grated parmesan, 1/2 teaspoon ground black pepper, and 1/2 cup chilled unsweetened almond milk into a blender. Blend on high for 1 to 2 minutes until the sauce is completely smooth and creamy.
  4. Season the Sauce: Taste the sauce and add salt as desired to enhance the flavors.
  5. Combine Pasta and Sauce: Pour the creamy Cottage Cheese Alfredo sauce over the slightly cooled pasta. Toss well to coat the pasta evenly with the sauce.
  6. Final Taste and Garnish: Taste the pasta with sauce and adjust the seasoning with additional salt or pepper if needed. Garnish with extra grated parmesan and fresh parsley before serving.

Notes

  • For a dairy-free version, substitute almond milk for the milk and omit parmesan or use a vegan alternative.
  • You can use any pasta type, but fettuccine works best to hold the creamy sauce.
  • Sautéing the garlic in butter instead of microwaving imparts a richer flavor.
  • Use chilled milk to help the sauce blend to a smooth texture.
  • Store leftovers covered in the refrigerator for up to 3 days. Reheat gently to prevent curdling.
