This Easy Crockpot Pineapple BBQ Chicken recipe is a delicious and effortless way to enjoy tender, flavorful chicken infused with a tangy pineapple barbecue sauce. Perfect for a cozy weeknight dinner, it requires minimal prep and cooks slowly in a crockpot, resulting in juicy, shredded chicken that’s great for sandwiches, tacos, or served over rice.

Ingredients

Scale

Chicken

  • 4 pieces Boneless, skinless chicken breasts

Sauce

  • 1 cup Barbecue sauce
  • 1 cup Pineapple chunks (fresh or canned, drained)
  • 1 tablespoon Soy sauce
  • 1 teaspoon Garlic powder
  • 1 teaspoon Onion powder

Seasoning & Garnish

  • Salt, to taste
  • Pepper, to taste
  • Chopped green onions, as needed for garnish

Instructions

  1. Prepare the chicken: Place the boneless, skinless chicken breasts into the bottom of the crockpot. Season the chicken with salt and pepper according to your taste preference.
  2. Mix the sauce: In a medium bowl, combine the barbecue sauce, pineapple chunks, soy sauce, garlic powder, and onion powder. Stir well until all ingredients are fully mixed to create a flavorful pineapple BBQ sauce.
  3. Pour the sauce over chicken: Pour the pineapple BBQ sauce mixture evenly over the chicken in the crockpot, making sure each piece is well coated with the sauce.
  4. Cook the chicken: Cover the crockpot with its lid and cook the chicken on low heat for 6-7 hours, or on high heat for 3-4 hours. The chicken should be fully cooked through and tender enough to shred easily.
  5. Shred the chicken: Once cooked, carefully remove the chicken breasts from the crockpot. Using two forks, shred the chicken into bite-sized pieces. Return the shredded chicken back into the crockpot and stir it well to coat it thoroughly with the sauce.
  6. Serve: Serve the pineapple BBQ chicken hot, garnished with chopped green onions to add freshness and color. It pairs wonderfully with rice, in sandwiches, or as a filling for tacos.

Notes

  • You can use fresh or canned pineapple chunks; if using canned, drain them well to prevent excess liquid.
  • Adjust the seasoning to your taste, especially the salt and pepper levels.
  • For a spicier kick, consider adding a pinch of crushed red pepper flakes or a dash of hot sauce to the sauce mixture.
  • Leftover pineapple BBQ chicken can be stored in an airtight container in the refrigerator for up to 3 days.
  • The recipe is easily doubled or halved depending on your serving needs.
  • If you prefer a thicker sauce, remove the chicken once shredded and simmer the sauce on high with the lid off to reduce it before mixing the chicken back in.
