Wet Ingredients
- 1 cup dark brown sugar, packed
- 1 cup (2 sticks) unsalted butter, at room temperature

- 1/2 cup cultured buttermilk
Dry Ingredients
- 1 3/4 cups cake flour (or all-purpose flour)

- 1/2 tsp freshly grated nutmeg
- 1/4 tsp ground cloves

- Prepare Pan: Preheat the oven to 350°F. Lightly butter a 9×5 inch loaf pan and line it with parchment paper leaving long edges as handles for easy removal of the bread after baking.
- Cream Butter and Sugar: In a stand mixer, beat the dark brown sugar and butter together on medium speed for about 5 minutes until the mixture is light and fluffy, ensuring no lumps remain in the sugar.
- Add Eggs: Beat in the eggs one at a time, fully incorporating each egg before adding the next. Continue beating for another 2-3 minutes to achieve a light and fluffy batter.
- Mix Dry Ingredients: Whisk together the flour, baking powder, salt, cinnamon, allspice, nutmeg, and cloves in a separate bowl.
- Combine Wet and Dry: Add the dry ingredients to the mixer alternating with the buttermilk, starting and ending with the dry ingredients. Mix until just combined to avoid overmixing.
- Fold in Peaches: Gently fold in the diced peaches using a spatula, making sure they are evenly distributed throughout the batter.
- Fill Pan and Add Sugar: Pour the batter into the prepared loaf pan and spread it evenly. Sprinkle the coarse sparkling sugar evenly over the top for a sweet, crunchy crust.
- Bake: Place the pan on the center rack of the oven and bake for 50-55 minutes. Check doneness by inserting a toothpick near the center; it should come out clean or with moist crumbs but no wet batter.
- Cool and Serve: Let the bread cool in the pan for 10 minutes, then remove it using the parchment paper handles. You may slice it warm or allow it to cool completely before slicing.

- If you don’t have cake flour, use all-purpose flour or make a cake flour substitute by replacing 2 tablespoons of regular flour with 2 tablespoons of cornstarch per cup, then sift twice.

- Make sure peaches are diced with skin on to add texture and flavor; fresh peaches work best in season.
