Sandwich Assembly

  • 4 slices Swiss cheese (or Gruyère for a richer taste)
  • 8 slices bread (Rye, Sourdough, or Artisan)

Instructions

  1. Prepare the Mushrooms: Heat a dry skillet over medium heat. Add the sliced mushrooms and cook for 5–7 minutes until their moisture evaporates. Then add butter, olive oil, and finely chopped shallots, cooking for another 5 minutes until the mushrooms are golden and tender. Stir in thyme, balsamic vinegar (if using), salt, and pepper to taste. Remove from heat and set aside.
  2. Assemble the Sandwiches: Butter one side of each slice of bread generously. On the unbuttered side of four slices, layer one slice of Swiss cheese, an even portion of the mushroom mixture, and then another slice of Swiss cheese. Top each with another slice of bread, making sure the buttered side is facing outward.
  3. Cook the Melt: Heat a skillet or panini press over medium heat. Place the assembled sandwiches and cook them for 2–3 minutes per side, pressing gently, until the bread is golden brown and the cheese has fully melted inside. Remove from heat, slice if desired, and serve warm.
