Instructions

  1. Heat the Skillet: In a large skillet over medium heat, add 2 tablespoons of olive oil and 2 tablespoons of butter, allowing the butter to melt and combine with the oil to create a flavorful cooking base.
  2. Sauté the Veggies: Add the cauliflower florets to the skillet and cook for 5-6 minutes, stirring occasionally, until they begin to turn slightly golden and tender. Then add the sliced mushrooms and continue to cook for another 4-5 minutes until the mushrooms are softened and the vegetables are well caramelized.
  3. Add Garlic & Seasonings: Stir in the minced garlic, ½ teaspoon smoked paprika, ½ teaspoon Italian seasoning, and season with salt and black pepper to taste. Cook for an additional 2 minutes, stirring frequently, until the garlic becomes fragrant and the spices are evenly distributed.
  4. Finish & Serve: Remove the skillet from heat, then drizzle with 1 tablespoon of fresh lemon juice for brightness. If desired, sprinkle ¼ cup of Parmesan cheese over the vegetables and garnish with freshly chopped parsley. Serve the dish hot as a side or light main course.
