Instructions

  1. Prepare the Dough: Melt the shredded mozzarella and cream cheese together in the microwave until soft and easily mixed. In a separate bowl, whisk together the eggs, almond flour, baking powder, parmesan cheese, and salt. Add the melted cheese mixture to the dry ingredients and fold everything together gently until a sticky dough forms. Cover and refrigerate the dough for at least 4 hours to allow it to firm up.
  2. Shape the Flatbreads: Preheat your oven to 350°F (175°C). Divide the chilled dough into 8 equal portions. Roll each portion into a ball, then place each ball between two sheets of parchment paper and flatten it to about ¼ inch thickness, forming a round flatbread shape.
  3. Bake: Arrange the flattened dough pieces on a baking sheet lined with parchment paper. Bake in the preheated oven for 15-17 minutes, or until the flatbreads turn golden brown and develop a crispy edge.
  4. Make the Garlic Butter: While the flatbreads bake, heat the butter and olive oil in a small saucepan over medium heat. Add the minced garlic and cook until it becomes fragrant and lightly golden, being careful not to burn it. Remove from heat and stir in the chopped parsley.
