Instructions

  1. Cook Pasta and Broccoli: Bring a large pot of salted water to a boil. Add the rotini pasta and cook according to package directions for about 8 minutes. Add the broccoli florets during the last two minutes of cooking to blanch them. Drain the pasta and broccoli, then rinse under cold water to stop the cooking process and cool the ingredients.
  2. Combine Salad Ingredients: In a large serving bowl, toss together the cooked pasta and broccoli, cherry tomatoes, green bell pepper, red onion, and kalamata olives until evenly mixed.
  3. Add Feta Cheese: Sprinkle the crumbled feta cheese evenly over the top of the pasta salad for a creamy, tangy flavor.
  4. Prepare Dressing: In a medium-sized bowl, whisk together red wine vinegar, Dijon mustard, honey, minced garlic, dried oregano, kosher salt, and black pepper until fully combined.
  5. Emulsify Dressing: While whisking continuously, slowly drizzle in the extra virgin olive oil until the dressing thickens and emulsifies. If the dressing is not being used immediately, whisk it again before adding to the salad.
