Instructions

  1. Roast the Garlic: Preheat your oven to 400°F (200°C). Slice off the top of the head of garlic, drizzle with 1 tablespoon of olive oil, wrap it tightly in aluminum foil, and roast it in the oven for about 30-35 minutes until the cloves are soft and caramelized. After roasting, allow it to cool slightly, then squeeze the garlic cloves out of their skins into a bowl.
  2. Prepare the Spinach: In a skillet over medium heat, add the remaining tablespoon of olive oil. Sauté the chopped spinach until wilted, about 2-3 minutes. Season with salt and pepper to taste. Remove from heat and set aside.
  3. Make the White Sauce: In the bowl with the roasted garlic, mash the garlic cloves with a fork until smooth. Add the ricotta cheese, half of the shredded mozzarella, dried oregano, and a pinch of salt and pepper. Stir gently until all ingredients are well combined to form a creamy white sauce.
  4. Assemble the Pizza: Spread the garlic-ricotta mixture evenly over the pizza crust. Evenly distribute the sautéed spinach on top, then sprinkle with the remaining mozzarella and crumbled feta cheese. If you want some heat, sprinkle crushed red pepper flakes over the top.
  5. Bake the Pizza: Place the pizza into the preheated oven and bake for 15-20 minutes, or until the crust turns golden brown and the cheeses are bubbly and slightly browned.
