Crust
- 1 cup Oreo Crumbs (about 10–11 Oreo cookies processed)
- 2 1/2 tablespoons Butter, melted
Cheesecake Filling
- 2 (8 oz) packages Cream Cheese, softened
- 1/2 cup Sugar
- 2 Eggs
- 1 teaspoon Vanilla Extract
- Neon Green Food Coloring, to desired color
Toppings (Optional)
- Preheat Oven and Prepare Pan: Preheat your oven to 350°F (175°C). Line a cupcake pan with paper liners to prepare for the crust and cheesecake filling.
- Make the Crust: Place about 10-11 Oreo cookies in a food processor and pulse until finely ground into crumbs. Add the melted butter and pulse again until the mixture is well combined and resembles wet sand.
- Form the Crust Base: Evenly divide the Oreo crumb mixture among the cupcake liners. Press the crumbs firmly into the bottom of each liner to form a compact crust base.
- Prepare the Cheesecake Filling: In a medium bowl, beat together the softened cream cheese and sugar until smooth and creamy. Beat in the eggs one at a time, followed by the vanilla extract until fully incorporated and smooth.
- Add the Green Color: Stir in neon green food coloring a few drops at a time until the cheesecake mixture reaches a bright, Grinch-inspired green color.
- Fill the Cupcake Liners: Spoon approximately 1/4 cup of the green cheesecake mixture evenly into each cupcake liner over the prepared crust.
- Bake: Bake the mini cheesecakes in the preheated oven for 15-17 minutes. The centers should be slightly jiggly when done; this ensures a creamy texture once cooled.
- Cool and Chill: Remove the pan from the oven and allow the cheesecakes to cool completely in the pan. Then refrigerate the cheesecakes until they are firm, at least 2-3 hours or overnight.
- Serve: Once chilled and set, top each mini cheesecake with whipped cream and sprinkles if desired for an extra festive touch.
Notes
- Make sure cream cheese is softened to room temperature to ensure a smooth filling without lumps.
- You can control the intensity of the green color by adding neon food coloring a drop at a time.
- If you don’t have a food processor, place the Oreos in a sealed plastic bag and crush them with a rolling pin.
- Do not overbake; a slightly jiggly center means the cheesecake will be creamy and not dry.
- Store leftover cheesecakes covered in the refrigerator for up to 3 days.
- For a gluten-free version, use gluten-free sandwich cookies instead of Oreos if available.
