Instructions

  1. Preheat Oven and Prepare Pan: Preheat your oven to 350°F (175°C). Line a cupcake pan with paper liners to prepare for the crust and cheesecake filling.

  4. Prepare the Cheesecake Filling: In a medium bowl, beat together the softened cream cheese and sugar until smooth and creamy. Beat in the eggs one at a time, followed by the vanilla extract until fully incorporated and smooth.
  5. Add the Green Color: Stir in neon green food coloring a few drops at a time until the cheesecake mixture reaches a bright, Grinch-inspired green color.
  6. Fill the Cupcake Liners: Spoon approximately 1/4 cup of the green cheesecake mixture evenly into each cupcake liner over the prepared crust.
  7. Bake: Bake the mini cheesecakes in the preheated oven for 15-17 minutes. The centers should be slightly jiggly when done; this ensures a creamy texture once cooled.
