Instructions

  1. Cook the Pasta: Bring a large pot of salted water to a boil and add 8 oz (225g) of pasta. Cook according to package directions until al dente, typically 9-11 minutes. Drain the pasta, reserving ½ cup of the pasta water for later use.
  2. Prepare and Cook the Chicken: While the pasta cooks, slice chicken breasts into thin strips for faster and even cooking. Heat 2 tablespoons of olive oil in a large skillet over medium-high heat. Season the chicken with salt and add to the pan. Cook for 4-5 minutes per side, until the chicken is golden and cooked through. Remove chicken from skillet and set aside.
