  • 4 Cups Beef Broth
  • 5 Each Carrots, peeled and cut into chunks
  • 1 Cup Frozen Peas
  • 2 Each Bay Leaves
  • Mashed Potatoes for Serving

Instructions

  1. Prepare the Meat Coating: Add the beef stew meat, flour, salt, pepper, garlic powder, onion powder, fresh rosemary, and dried thyme to a large Ziploc bag. Seal and shake well to evenly coat all pieces of meat with the seasoning mixture.
  2. Heat the Oil and Sear Meat: Heat 2 tablespoons of olive oil in a large Dutch oven over medium-high heat. Once hot, add the coated meat and sear on all sides until nicely browned to develop flavor.
  3. Add Broth and Vegetables: Slowly pour in 4 cups of beef broth while stirring continuously to incorporate all browned bits from the pot. Add peeled and chunked carrots along with 2 bay leaves. Bring the mixture to a boil.
  4. Simmer the Stew: Reduce the heat to medium-low and cover with a lid. Let the stew cook gently for about 45 minutes, stirring occasionally to prevent sticking.
  5. Add Peas and Finalize: Five minutes before the cooking time ends, stir in 1 cup of frozen peas. After cooking, remove the bay leaves and discard. Serve the stew hot with mashed potatoes.

  • Once removed from heat, the stew will continue to thicken as it cools. If you desire a thicker consistency, add a small amount of instant mashed potato flakes to the stew and stir.
