Main Ingredients
- 3 Pounds Beef Stew Meat or Lamb
- ¼ Cup All Purpose Flour
- 2 teaspoons Salt
- 1 teaspoon Black Pepper
- 1 teaspoon Garlic Powder
- 1 teaspoon Onion Powder
- 2 teaspoons Fresh Rosemary
- 1 teaspoon Dried Thyme
- 4 Cups Beef Broth
- 5 Each Carrots, peeled and cut into chunks
- 1 Cup Frozen Peas
- 2 Each Bay Leaves
- Mashed Potatoes for Serving
Cooking Essentials
- Prepare the Meat Coating: Add the beef stew meat, flour, salt, pepper, garlic powder, onion powder, fresh rosemary, and dried thyme to a large Ziploc bag. Seal and shake well to evenly coat all pieces of meat with the seasoning mixture.
- Heat the Oil and Sear Meat: Heat 2 tablespoons of olive oil in a large Dutch oven over medium-high heat. Once hot, add the coated meat and sear on all sides until nicely browned to develop flavor.
- Add Broth and Vegetables: Slowly pour in 4 cups of beef broth while stirring continuously to incorporate all browned bits from the pot. Add peeled and chunked carrots along with 2 bay leaves. Bring the mixture to a boil.
- Simmer the Stew: Reduce the heat to medium-low and cover with a lid. Let the stew cook gently for about 45 minutes, stirring occasionally to prevent sticking.
- Add Peas and Finalize: Five minutes before the cooking time ends, stir in 1 cup of frozen peas. After cooking, remove the bay leaves and discard. Serve the stew hot with mashed potatoes.
Notes
- Once removed from heat, the stew will continue to thicken as it cools. If you desire a thicker consistency, add a small amount of instant mashed potato flakes to the stew and stir.
- Traditionally, Irish Stew is made with lamb or mutton; however, beef stew meat is a more accessible and affordable alternative in many places.
- For best flavor, use fresh herbs when possible and quality beef broth.
- This recipe can be adapted for slow cooker preparation by transferring ingredients and cooking on low for 6-8 hours.
