Ingredients

Scale

Chicken

  • 1 large chicken breast, raw, seasoned with salt and pepper
  • 1 tbsp olive oil
  • OR alternatively, 1 cup cooked rotisserie chicken, shredded or sliced

Sandwich

  • 4 fresh buttery croissants
  • 2 cups romaine lettuce, washed and chopped
  • 1/3 cup Caesar dressing, homemade or store-bought
  • 1/4 cup freshly grated Parmesan cheese
  • 1/4 cup croutons, crushed (optional)
  • Salt and pepper, to taste

Instructions

  1. Cook the chicken: Season the raw chicken breast with salt and pepper. Heat olive oil in a skillet over medium heat and cook the chicken breast for 8-10 minutes, flipping halfway through until fully cooked. Remove from heat and let it cool slightly before shredding or slicing. Alternatively, use pre-cooked rotisserie chicken to save time.
  2. Prepare the lettuce: Wash and thoroughly dry the romaine lettuce. Chop it into bite-sized pieces and place in a large mixing bowl.
  3. Mix the Caesar filling: Add the shredded chicken to the bowl with the lettuce. Pour the Caesar dressing over and toss everything until evenly coated. Sprinkle in the grated Parmesan cheese and crushed croutons if using, and mix gently to combine all flavors without crushing the greens.
  4. Slice the croissants: Carefully slice each croissant horizontally into a top and bottom half, creating a pocket for the filling.
  5. Assemble the sandwich: Spoon an ample amount of the Caesar chicken and lettuce mixture onto the bottom half of each croissant. Add extra Parmesan cheese on top if desired. Cover with the croissant top half to complete the sandwich.
  6. Serve: Serve immediately to maintain freshness and crunch, or wrap tightly in parchment paper for a portable meal later.

Notes

  • Use fresh ingredients for better flavor and texture.
  • Don’t over-dress the filling to avoid overpowering the flavors.
  • Lightly toast the croissants for added crunch and warmth.
  • Prep the chicken and lettuce mixture ahead of time for quick assembly when needed.
