Rice
Garlic Butter Sauce
- 6 tablespoons Unsalted Butter
- 4 cloves Garlic, minced
Shrimp
- 12–16 oz Extra Large Shrimp, peeled & deveined
Additional Ingredients
- ¼ cup Shredded Parmesan Cheese
- 3 tablespoons Skim Milk
- 2 tablespoons Fresh Parsley, chopped
- Salt, to taste
- Fresh Ground Black Pepper, to taste
- Cook the Rice: Begin by preparing 1 cup of minute rice according to the package instructions. Once cooked, set the rice aside to keep it warm and fluffy, ensuring it’s ready to combine with the shrimp.
- Make Garlic Butter: In a large skillet over medium heat, melt 6 tablespoons of unsalted butter. Add 4 cloves of minced garlic and cook for 2–3 minutes, stirring frequently until the garlic is fragrant and lightly browned. Be careful not to burn the garlic by reducing the heat if necessary.
- Cook Shrimp: Add 12–16 oz of peeled and deveined extra-large shrimp to the skillet. Sauté the shrimp for about 2 minutes, stirring frequently until they turn pink and opaque, indicating they are cooked through.
- Combine Rice & Shrimp: Pour the cooked rice into the skillet with the shrimp and garlic butter. Gently stir to combine everything, making sure the rice and shrimp are evenly coated with the buttery garlic sauce.
- Add Creaminess: Stir in ¼ cup shredded Parmesan cheese, 3 tablespoons skim milk, 2 tablespoons chopped fresh parsley, and season with salt and freshly ground black pepper to taste. Cook for an additional 1–2 minutes until the mixture is creamy and heated through.
- Garnish & Serve: Remove the skillet from heat. Garnish with extra Parmesan cheese and fresh parsley for a visually appealing and flavorful finish. Serve immediately while warm.
Notes
- Use minute rice for quick preparation, or substitute with regular rice but adjust cook time accordingly.
- Don’t overcook the shrimp to prevent them from becoming rubbery; they cook quickly and are done when pink and opaque.
- Adjust garlic quantity based on your preference for garlicky flavor.
- For a richer dish, substitute skim milk with heavy cream or half-and-half.
- Fresh parsley adds color and freshness; you can substitute with cilantro if preferred.
- Feel free to add a pinch of red pepper flakes for heat.
