Ingredients

Scale

Shrimp Mixture

  • 1 pound shrimp, peeled and deveined
  • 2 cloves garlic, minced
  • 1 teaspoon Cajun seasoning
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • Green onions for garnish (optional)

Cauliflower Grits

  • 1 large head of cauliflower, cut into florets
  • 1 cup heavy cream
  • 1/4 cup cream cheese, softened
  • Salt and pepper to taste

Topping

  • 1 cup shredded cheddar cheese

Instructions

  1. Preheat the Oven: Preheat your oven to 375°F (190°C) to prepare for baking the casserole.
  2. Prepare Cauliflower Grits: Steam or boil the cauliflower florets until tender, about 5-7 minutes. Drain well. In a blender or food processor, combine the cauliflower with heavy cream, softened cream cheese, salt, and pepper. Blend until smooth and creamy, creating a low-carb cauliflower grits base.
  3. Cook the Shrimp: Heat olive oil in a skillet over medium heat. Add minced garlic and sauté briefly until fragrant. Add the shrimp and cook until they turn pink and are cooked through, about 3-4 minutes. Season with Cajun seasoning, salt, and pepper to enhance the flavor.
  4. Assemble the Casserole: Lightly grease a 9×13-inch baking dish. Spread the cauliflower grits evenly on the bottom of the dish. Layer the cooked shrimp mixture over the grits. Sprinkle the shredded cheddar cheese evenly on top to create a cheesy crust.
  5. Bake the Dish: Place the casserole in the preheated oven and bake for 20-25 minutes, or until the cheese is thoroughly melted and bubbly, and the casserole is heated through.
  6. Garnish and Serve: Remove the casserole from the oven and let it cool slightly. Garnish with chopped green onions if desired. Serve warm for a satisfying keto meal.

Notes

  • For a spicier kick, increase the amount of Cajun seasoning or add a pinch of cayenne pepper.
  • You can replace cheddar cheese with any other melting cheese like mozzarella or Monterey Jack depending on preference.
  • Make sure to drain the cauliflower very well before blending to avoid watery grits.
  • This dish can be prepared in advance and reheated in the oven before serving.
  • Use fresh shrimp for the best flavor, but frozen shrimp thawed properly also works well.
