A refreshing and healthy Key Lime Pie Chia Pudding recipe that combines the creamy texture of chia seeds soaked in almond milk with a tangy, smooth key lime mousse made from cashews and coconut milk. This vegan dessert is easy to prepare, perfect for a light treat or a nutritious snack with a bright citrus flavor.

Ingredients

Scale

Chia Pudding

  • 4 tbsp chia seeds
  • 1 cup almond milk
  • Zest of 3 key limes (or 1 regular lime)
  • 2 tbsp maple syrup
  • 1/4 tsp vanilla extract

Key-Lime Pudding Layer

  • 1/2 cup raw cashews, soaked in hot water for 1 hour then drained
  • 6 tbsp coconut milk (full-fat from a can)
  • 2 tbsp maple syrup
  • 1/4 cup key-lime juice (or lime juice)
  • Zest of 2 key limes (or 1 regular lime)
  • 1/2 tsp matcha powder (optional, for color)

Instructions

  1. Prepare chia pudding: Mix the chia seeds, almond milk, key lime zest, maple syrup, and vanilla extract together in a bowl. Whisk vigorously for 30 seconds until the mixture is well combined and the chia seeds are evenly distributed.
  2. Chill to set: Place the chia pudding mixture in the refrigerator and allow it to firm up for a minimum of 2 hours, or preferably overnight, until it reaches a thick, pudding-like texture.
  3. Make key lime mousse: Add the soaked and drained cashews to a blender or food processor along with the coconut milk, maple syrup, lime juice, lime zest, and matcha powder if using. Blend until the mixture is completely smooth, scraping down the sides as needed to achieve a creamy consistency.
  4. Assemble the pudding: Spoon the set chia pudding evenly into 4 small jars or serving glasses. Pour the creamy key lime mousse layer on top of the chia pudding in each container.
  5. Final chilling: Place the jars back in the refrigerator and allow the assembled pudding to set and chill for at least 2 more hours before serving.

Notes

  • Ensure the chia pudding sits for at least 2 hours to allow the seeds to fully absorb the liquid and develop a pudding-like consistency.
  • If key limes are unavailable, regular limes can be substituted, though key limes provide a distinctive and more authentic flavor.
  • A blender, food processor, or magic bullet can be used to blend the key lime mousse layer to ensure a smooth texture.
  • Store leftover puddings covered in the refrigerator for up to one week for best freshness.
