Meat Mixture
- 1 lb ground beef or lamb (or a mix of both)
- 1 small onion, grated
- 3 garlic cloves, minced
- 1/4 cup chopped fresh parsley
- 1/4 cup chopped fresh cilantro
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1/2 teaspoon ground cinnamon
- 1/2 teaspoon allspice
- 1/2 teaspoon paprika
- 1/4 teaspoon cayenne pepper (optional)
- Salt and pepper to taste
Additional
- Skewers (wooden or metal)
- Prepare Skewers: If using wooden skewers, soak them in water for 30 minutes to prevent burning during grilling.
- Mix Ingredients: In a large bowl, combine the ground meat, grated onion, minced garlic, chopped parsley, cilantro, and all the spices including cumin, coriander, cinnamon, allspice, paprika, cayenne pepper (if using), salt, and pepper. Mix thoroughly until all ingredients are fully incorporated.
- Form Kebabs: Divide the mixture into 6 to 8 equal portions. Shape each portion around a skewer into a long, oval kebab shape, pressing firmly to ensure the meat adheres well.
- Preheat Grill: Preheat your grill, grill pan, or broiler to medium-high heat. Lightly oil the grill grates or pan to prevent sticking.
- Cook Kebabs: Grill the kebabs for about 10 to 12 minutes, turning occasionally to ensure even cooking and browning on all sides. Cook until the meat is fully cooked through and nicely charred.
- Serve: Serve the kofta kebabs hot alongside rice, flatbread, or with accompaniments like tahini sauce or yogurt sauce for a complete Middle Eastern meal.
Notes
- Soaking wooden skewers prevents them from burning on the grill.
- Feel free to use a combination of beef and lamb for a richer flavor.
- Adjust the cayenne pepper to control heat level according to preference.
- These kebabs can also be cooked under a broiler or on a grill pan if an outdoor grill is unavailable.
- Leftover cooked kebabs can be refrigerated for up to 3 days and reheated gently.
