Ingredients

Scale

Vegetables

  • 1 large eggplant, cut into 1-inch cubes

Glaze

  • 1/4 cup white miso paste
  • 2 tablespoons mirin
  • 1 tablespoon soy sauce
  • 1 tablespoon honey
  • 1 teaspoon grated fresh ginger
  • 1 clove garlic, minced

Others

  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Sesame seeds for garnish (optional)
  • Chopped green onions for garnish (optional)

Instructions

  1. Preheat Oven: Preheat your oven to 400°F (200°C) to prepare for roasting the eggplant.
  2. Toss Eggplant: In a baking sheet, toss the eggplant cubes with olive oil, salt, and pepper until they are well coated, ensuring even roasting.
  3. Roast Eggplant: Place the baking sheet in the oven and roast the eggplant for 20-25 minutes, flipping halfway through, until the cubes are tender and lightly browned.
  4. Make Glaze: While the eggplant is roasting, whisk together the white miso paste, mirin, soy sauce, honey, grated fresh ginger, and minced garlic in a small bowl until smooth and combined.
  5. Apply Glaze: Remove the roasted eggplant from the oven, then generously brush the miso glaze over each cube to coat them evenly.
  6. Caramelize Glaze: Return the glazed eggplant to the oven and roast for an additional 5-7 minutes until the glaze becomes bubbly and caramelized.
  7. Garnish and Serve: Once done, garnish with sesame seeds and chopped green onions if desired, then serve the miso glazed eggplant warm.

Notes

  • Use a light-colored baking sheet to prevent excessive browning of the eggplant.
  • If you prefer a less sweet glaze, reduce the honey quantity slightly.
  • The eggplant can be cut into different shapes, like slices or wedges, but cooking time may vary.
  • For a vegan option, substitute honey with maple syrup or agave nectar.
  • To enhance the flavor, let the glazed eggplant rest for a few minutes before serving to absorb the glaze fully.
