Ingredients

Scale

Noodles

  • 12 oz lo mein noodles

Meat

  • 1 lb ground beef

Sauce

  • 3 tbsp soy sauce
  • 3 tbsp hoisin sauce
  • 2 tbsp brown sugar
  • 1 tbsp cornstarch
  • 2 tbsp water (for slurry)

Aromatics and Vegetables

  • 3 cloves garlic, minced
  • 1 tbsp fresh ginger, minced
  • 1 red bell pepper, chopped
  • 1 green bell pepper, chopped
  • 4 green onions, sliced

Others

  • 1 tbsp oil (vegetable or sesame)

Instructions

  1. Cook the Noodles: Bring a large pot of water to a boil. Add the lo mein noodles and cook according to package instructions until al dente. Drain the noodles well and set them aside to prevent sticking.
  2. Brown the Ground Beef: Heat a large skillet over medium-high heat. Add the ground beef and cook, breaking it up with a spatula, until fully browned. Drain any excess fat to keep the dish from becoming greasy.
  3. Sauté Garlic and Ginger: Push the cooked beef to one side of the skillet. Add the oil along with the minced garlic and ginger to the empty side. Sauté for about 30 seconds until fragrant, taking care not to burn the aromatics.
  4. Cook Bell Peppers: Add the chopped red and green bell peppers to the skillet. Stir and cook for 3 to 4 minutes until they become slightly tender but still retain some crunch.
  5. Prepare and Add the Sauce: In a small bowl, mix together the soy sauce, hoisin sauce, brown sugar, and 2 tablespoons of water. Pour this sauce mixture into the skillet with the beef and vegetables, stirring to combine evenly.
  6. Thicken the Sauce: In a separate small bowl, stir the cornstarch into 2 tablespoons of water to make a slurry. Pour this slurry into the skillet and mix well. Continue cooking for a few minutes until the sauce has thickened and coats the ingredients beautifully.
  7. Toss Noodles and Green Onions: Add the cooked lo mein noodles and sliced green onions to the skillet. Toss everything together thoroughly to ensure the noodles and vegetables are well coated with the glossy sauce.
  8. Serve: Serve the Mongolian ground beef noodles hot straight from the skillet. Enjoy immediately for the best flavor and texture.

Notes

  • For extra heat, add a pinch of red pepper flakes or a drizzle of sriracha when adding the sauce.
  • You can substitute ground beef with ground chicken, turkey, or pork for variation.
  • If you prefer gluten-free, use gluten-free soy sauce and noodles.
  • Leftovers can be stored in an airtight container in the refrigerator for up to 3 days and reheated on the stovetop or microwave.
