Ingredients

Scale

Meatloaf Mixture

  • 1 pound ground beef
  • 1/2 pound ground pork
  • 1 cup breadcrumbs
  • 1/2 cup milk
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup finely chopped onions
  • 1 cup finely chopped mushrooms
  • 4 slices bacon, cooked and crumbled
  • 1 cup shredded Swiss cheese
  • 2 large eggs
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon ketchup
  • 1 teaspoon garlic powder
  • 1 teaspoon dried thyme
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper

Ketchup Glaze

  • 1/2 cup ketchup (for topping)

Instructions

  1. Preheat Oven: Preheat your oven to 375°F (190°C) to prepare for baking the meatloaf.
  2. Cook Bacon: In a skillet, cook the 4 slices of bacon until crispy. Once done, crumble the bacon into small pieces and set aside.
  3. Sauté Onions and Mushrooms: Using the same skillet, sauté the finely chopped onions and mushrooms until they are softened and fragrant. Remove from heat and let cool.
  4. Combine Ingredients: In a large bowl, combine the ground beef, ground pork, breadcrumbs, milk, grated Parmesan cheese, crumbled bacon, shredded Swiss cheese, sautéed onions and mushrooms.
  5. Add Seasonings and Eggs: Add the eggs, Worcestershire sauce, 1 tablespoon ketchup, garlic powder, dried thyme, salt, and black pepper to the meat mixture. Mix gently until just combined, being careful not to overmix.
  6. Shape Meatloaf: Shape the meat mixture into a loaf shape and place it into a greased baking dish to ensure easy removal after baking.
  7. Apply Ketchup Glaze: Spread the remaining 1/2 cup of ketchup evenly over the top of the meatloaf, which will create a tangy, flavorful glaze as it bakes.
  8. Bake: Bake the meatloaf in the preheated oven for 60-70 minutes or until the internal temperature reaches 160°F (71°C) to ensure it is fully cooked and safe to eat.
  9. Rest: Remove the meatloaf from the oven and let it rest for 10 minutes. This helps the juices redistribute, making the meatloaf moist and easier to slice.
  10. Serve: Slice the meatloaf and serve warm. Enjoy your delicious Mushroom Swiss Cheese Meatloaf!

Notes

  • Use a meat thermometer to check the internal temperature for safe cooking.
  • For an extra smoky flavor, you can use smoked bacon.
  • You can substitute ground turkey for a leaner option, but cooking time may vary.
  • Letting the meatloaf rest before slicing helps retain its juices.
  • Leftovers can be refrigerated for up to 3 days or frozen for longer storage.
