Instructions

  1. Make the Spread: In a small bowl, combine mayonnaise, pickle relish, ketchup, sugar, and white vinegar. Mix well until the spread turns a pink color. Set aside to allow flavors to meld.
  2. Prepare the Patties: Divide the ground beef into 8 portions, about 3 to 4 ounces each. Gently flatten each portion into a circular patty, taking care not to overwork the meat. Sprinkle both sides with salt and black pepper. Set aside.
  3. Make Caramelized Onion Buns: Heat vegetable oil in a large pan or flat grill over medium to medium-low heat. Add the onion slices and sprinkle lightly with sugar and salt. Cook until the edges turn golden, then carefully flip to caramelize the other side. Just before removing from heat, place American cheese slices on half of the onions to melt.
  4. Cook and Assemble the Burger: Over medium-high heat, add vegetable oil and half the butter to a skillet. Place patties in the pan, optionally brushing mustard on the raw side. Cook for 2-3 minutes until a brown crust forms. Flip patties and add a slice of American cheese on half of them, cooking for an additional minute. Stack a plain patty on top of a cheese-topped patty to create the double burger. Place this stack on an onion slice without cheese, then top with a cheese-topped grilled onion to form the ‘bun.’ Serve immediately with the prepared spread.
