For the Salmon
- 2 tablespoons avocado oil
- 4 (6-ounce) salmon filets, preferably Alaskan Sockeye or Coho
- Salt and pepper, to taste
For the Orange Glaze
- 1 orange, juiced
- 2 cloves garlic, minced
- 2 tablespoons honey
- 2 tablespoons tamari
- 1 teaspoon thyme, finely chopped
- 1/2 teaspoon arrowroot flour
- 1 teaspoon water
- Prepare the salmon: Pat the salmon filets dry thoroughly with a paper towel, then season both sides evenly with salt and pepper to enhance flavor and aid in a good sear.
- Cook the salmon: Heat avocado oil in a pan over medium-high heat. Once hot, add the salmon filets skin-side down and cook for 3-4 minutes on each side until nicely browned and cooked through.
- Make the arrowroot slurry: While the salmon cooks, combine the arrowroot flour and water in a small bowl, stirring until smooth. Set aside this slurry which will be used to thicken the glaze.
- Remove salmon: Transfer the cooked salmon to a plate and set aside while you prepare the glaze in the same pan.
- Sauté garlic: Reduce heat to medium-low and add minced garlic to the pan. Sauté for about 30 seconds until fragrant but not browned.
- Create the glaze: Pour in the fresh orange juice, then add honey, tamari, thyme, and the arrowroot slurry. Whisk continuously for 1-2 minutes until the glaze thickens slightly and becomes glossy.
- Glaze the salmon: Return the salmon filets to the pan and spoon the orange glaze generously over each piece, allowing the flavors to meld before serving.

- Using a seasoned cast iron pan helps prevent the salmon from sticking and promotes even cooking.
- The orange glaze will continue to thicken as it cools, so remove from heat once it is slightly thickened.
