Delicious oven-fried feta rolls filled with creamy ricotta and feta cheese, wrapped in crispy phyllo pastry, and drizzled with a sweet and spicy chili honey glaze. Perfect as an appetizer or snack, these golden rolls combine savory, creamy, and spicy flavors for an irresistible treat.

Ingredients

Scale

For the Rolls:

  • 8 oz feta cheese, crumbled
  • 1 cup ricotta cheese
  • 1 tsp fresh thyme leaves (optional)
  • 6 sheets phyllo pastry (cut in half lengthwise to make 12 sheets)
  • ¼ cup melted butter or olive oil (for brushing)

For the Chili Honey:

  • ¼ cup honey
  • ½ tsp red chili flakes (adjust to taste)

Instructions

  1. Prepare the Filling: In a bowl, mix the crumbled feta, ricotta, and thyme until smooth and evenly combined. Set aside.
  2. Prepare the Phyllo: Cut phyllo sheets in half lengthwise to create 12 strips. Keep them covered with a damp towel to prevent drying out while you assemble the rolls.
  3. Assemble the Rolls: Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper. Place a strip of phyllo on a work surface and brush with melted butter or olive oil. Spoon about 1 tablespoon of filling near one end, fold the sides in, and roll up tightly. Place seam-side down on the baking sheet. Repeat with the remaining phyllo and filling.
  4. Bake the Rolls: Brush the tops of the rolls with additional melted butter or olive oil for crispness. Bake in the preheated oven for 15 to 20 minutes, or until the rolls are golden brown and crispy.
  5. Make the Chili Honey: While the rolls bake, warm the honey in a small saucepan over low heat. Stir in the red chili flakes and cook for 1 to 2 minutes, allowing the flavors to meld. Remove from heat.
  6. Serve: Drizzle the warm chili honey over the baked feta rolls or serve it on the side as a dipping sauce. Garnish with extra fresh thyme if desired.

Notes

  • Keep phyllo pastry covered with a damp cloth while working to prevent it from drying out.
  • Adjust the amount of red chili flakes in the honey to suit your preferred spice level.
  • Use melted butter for a richer flavor or olive oil for a lighter alternative when brushing the phyllo.
  • Make sure to bake until golden and crispy for the perfect texture contrast.
  • These rolls are best served warm but can be reheated gently in the oven.
