Ingredients

Scale

French Toast Base

  • 1 (16-oz.) loaf French bread, sliced into 1/2“-thick slices
  • 8 large whole eggs
  • 1 2/3 cups heavy cream
  • 1 1/2 cups whole milk
  • 6 Tbsp. granulated sugar
  • 1 tsp. pure vanilla extract
  • 1/2 tsp. kosher salt

Pecan Topping

  • 10 Tbsp. unsalted butter, melted
  • 3/4 cup (160 g) packed light brown sugar
  • 3 cups raw pecan halves (about 11 oz.)
  • 6 Tbsp. corn syrup

To Serve

  • Maple syrup, for serving

Instructions

  1. Preheat and Prepare Bread: Arrange a rack in the center of your oven and preheat to 350°F (175°C). Shingle the sliced French bread evenly in a 13″ x 9″ baking dish to create a uniform layer.
  2. Make Custard and Soak Bread: In a large bowl, whisk together the eggs, heavy cream, whole milk, granulated sugar, vanilla extract, and kosher salt. Pour this custard mixture evenly over the bread slices, pressing down gently to ensure the bread absorbs the liquid well. Allow it to soak for 15 minutes for full flavor and texture.
  3. Prepare Pecan Topping: In a medium bowl, whisk together the melted unsalted butter, packed light brown sugar, and corn syrup until smooth. Fold in the raw pecan halves, coating them thoroughly in the mixture.
  4. Top and Bake: Dollop the pecan mixture over the soaked bread and gently spread it across the top to cover evenly. Bake the casserole in the preheated oven for 35 to 40 minutes, or until the top is lightly golden, the liquid custard is fully absorbed, and the pecans are toasted and glistening.
  5. Serve: Remove from the oven and serve warm with maple syrup on the side for drizzling, enhancing the traditional pecan pie flavors in this French toast casserole.

Notes

  • For best results, use day-old French bread as it absorbs the custard better without becoming too soggy.
  • Feel free to substitute half-and-half for the heavy cream and milk mixture for a lighter version.
  • Make sure to press the bread down when pouring the custard to ensure even soaking.
  • Store leftovers covered in the refrigerator and reheat portions in the oven or microwave before serving.
  • This casserole can also be prepared a day ahead; cover and refrigerate after soaking and before adding the topping, then bake fresh the next morning.
