This Pumpkin Whipped Feta Dip with Honey, Walnuts & Thyme is a creamy, tangy, and slightly sweet appetizer perfect for fall gatherings. The blend of tangy feta and Greek yogurt combined with smooth pumpkin puree and a touch of honey creates a luscious dip that pairs beautifully with toasted crusty bread or crackers. Garnished with crunchy walnuts, fresh thyme, and an extra drizzle of honey, it offers a delightful mix of textures and flavors.

Ingredients

Scale

Whipped Feta:

  • 8 oz block feta cheese, drained (about 220 g)
  • 1/4 cup plain Greek yogurt
  • 1 cup canned pumpkin puree (unsweetened)
  • 12 tbsp honey, plus extra for serving
  • 1 tsp dried thyme (or 2 tsp fresh thyme)
  • Freshly cracked black pepper, to taste

Toppings:

  • Fresh thyme sprigs
  • Chopped walnuts (optional)
  • Extra honey drizzle

To Serve:

  • Toasted crusty bread (sourdough or baguette)
  • Crackers

Instructions

  1. Blend Feta & Yogurt: In a food processor, combine the drained feta cheese and plain Greek yogurt. Blend until the mixture is smooth and creamy, stopping occasionally to scrape down the sides to ensure even blending.
  2. Add Pumpkin & Flavorings: Add the canned pumpkin puree, honey, dried or fresh thyme, and freshly cracked black pepper to the food processor. Blend again until all ingredients are fully combined and the dip reaches a smooth, creamy consistency.
  3. Chill: Transfer the whipped feta mixture to a bowl, cover it tightly, and refrigerate for 30 to 60 minutes to allow the flavors to meld and the dip to firm up slightly.
  4. Serve & Garnish: When ready to serve, top the dip with chopped walnuts for crunch, fresh thyme leaves for an herbal note, and an extra drizzle of honey to enhance the sweetness. Serve alongside toasted crusty bread slices or your favorite crackers for dipping.

Notes

  • Make Ahead: This dip can be prepared a day in advance, making it convenient for entertaining guests.
  • Crostini Option: Spread the dip on toasted baguette slices and add toppings to create an elegant appetizer.
  • Storage: Store any leftovers in an airtight container in the refrigerator for up to 3 days.
  • Texture Adjustment: If the dip is too thick after chilling, gently stir in a teaspoon of water or additional Greek yogurt to reach the desired consistency.
  • Nuts Substitution: Walnuts can be omitted or substituted with pecans or toasted pine nuts based on preference or allergies.
