Ingredients

Scale

Chicken and Seasoning

  • 23 pounds boneless skinless chicken breasts (4 medium-sized chicken breasts)
  • 1 ounce package mild taco seasoning (or use homemade taco seasoning)
  • 1 tsp kosher salt
  • ½ tsp cracked black pepper

Vegetables and Canned Ingredients

  • 10 ounce can mild diced tomatoes and green chilies with juice
  • 4 ounce can diced green chiles

Sauce

  • 15 ounce container salsa con queso

Instructions

  1. Prepare the Chicken: Place the boneless, skinless chicken breasts in a slow cooker or Instant Pot. Sprinkle the chicken evenly with the taco seasoning, kosher salt, and black pepper.
  2. Add Vegetables: Pour the can of mild diced tomatoes and green chilies (including the juice) and the can of diced green chiles over the chicken to add moisture and flavor.
  3. Cook the Chicken: Cook the chicken until fully tender and shreddable. If using a slow cooker, cook on low for 6-7 hours or on high for 3-4 hours. If using an Instant Pot, pressure cook on high for about 12 minutes with natural release.
  4. Shred the Chicken: Once cooked, remove the chicken breasts and shred them with two forks or a hand mixer. Return the shredded chicken to the cooking liquid to keep it moist and flavorful.
  5. Mix with Salsa Con Queso: Stir in the 15-ounce container of salsa con queso until the chicken is evenly coated and creamy.
  6. Assemble the Tacos: Spoon the queso chicken mixture into warm taco shells or tortillas. Add any additional toppings as desired such as lettuce, tomatoes, cilantro, or avocado.

Notes

  • Use mild taco seasoning for a family-friendly flavor or increase spice level with medium or hot taco seasoning if preferred.
  • Homemade taco seasoning can be used for better control over salt and spice content.
  • Leftover chicken can be stored in the refrigerator for up to 4 days or frozen for up to 2 months.
  • For a dairy-free option, substitute salsa con queso with a vegan cheese sauce.
  • Serve with fresh lime wedges for added brightness.
