Dry Ingredients

  • 2 cups gluten free flour blend (See Notes)
  • 2 tablespoons aluminum-free baking powder
  • 1 teaspoon salt

Wet Ingredients

  • 5 tablespoons cold butter
  • 1 cup milk (adjust per flour blend, see Notes)

Instructions

  1. Mix Dry Ingredients: In a large mixing bowl, whisk together 2 cups gluten free flour blend, 2 tablespoons aluminum-free baking powder, and 1 teaspoon salt until combined.
  2. Cut in Butter: Using a pastry blender, cut 5 tablespoons of cold butter into the flour mixture until it resembles coarse crumbs. Alternatively, grate the cold butter using a large cheese grater if you don’t have a pastry blender.
  3. Add Milk and Form Dough: Pour in 1 cup of milk and mix gently until a soft biscuit dough forms. Adjust moisture by adding more flour if dough is too wet or more milk if too dry.
  4. Prepare Dough Surface: Transfer the dough onto a silicone mat and gently press or roll it to about 2 inches thick. Avoid overworking the dough to maintain fluffiness.
  5. Cut Biscuits: Using a biscuit cutter, press down straight to cut biscuits. Do not twist the cutter to prevent sealing edges that would reduce rise.
  6. Set Up Air Fryer: Place biscuits on the air fryer metal tray, optionally lining with parchment paper to prevent sticking.
  7. Air Fry Biscuits: Cook at 400ºF for 10 minutes. Adjust cooking time if biscuits are made larger or smaller.
  8. Cool and Serve: Remove biscuits from air fryer and transfer to a cooling rack. Serve warm. These biscuits are excellent on their own or as gluten-free biscuit egg sandwiches.
