Roasted Garlic

  • 1 head garlic

Aioli

Instructions

  1. Preheat Oven: Set your oven to 400°F (200°C) to prepare for roasting the garlic.
  2. Prepare Garlic Bulb: Peel away the outer layers of the garlic bulb, keeping the cloves intact. Slice off the top of the bulb to expose the individual cloves. Place the bulb on a piece of aluminum foil, drizzle the exposed cloves with olive oil, and wrap tightly in the foil.
  3. Roast Garlic: Place the wrapped garlic bulb in the oven and roast for 30-40 minutes until the cloves become soft and golden brown, which enhances their natural sweetness and mellows the sharpness.
  4. Cool and Extract Garlic: Remove the garlic from the oven and allow it to cool slightly. Squeeze the softened roasted cloves out of their skins into a small bowl.
  5. Mash Garlic: Mash the roasted garlic cloves with a fork until they become smooth and creamy, forming the base for the aioli.
  6. Mix Aioli Ingredients: In a separate bowl, combine the mashed garlic with mayonnaise, lemon juice, and Dijon mustard. Stir the mixture thoroughly until it’s smooth and well blended. Season with salt and pepper to your preference.
  7. Garnish: Optionally, add chopped fresh parsley or chives on top for extra flavor and a pop of color.
  8. Refrigerate: Transfer the aioli to a serving dish or airtight container. Chill in the refrigerator for at least 30 minutes to let the flavors meld beautifully.
