4.6 from 151 reviews

Roasted Green Beans with Garlic and Parmesan is a simple and flavorful side dish featuring crisp-tender green beans roasted to perfection with olive oil, garlic, and freshly grated Parmesan cheese. Finished with a squeeze of lemon juice and a sprinkle of fresh parsley, this recipe offers a delightful combination of savory, tangy, and fresh flavors, perfect for complementing any main course.

Ingredients

Scale

Vegetables

  • 1 pound green beans, trimmed

Seasonings & Condiments

  • 2 large cloves garlic, minced
  • Salt and pepper, to taste
  • 1/2 a lemon, juice
  • 12 Tbsp fresh parsley, chopped (to garnish)

Oils & Dairy

  • 2 Tbsp olive oil
  • 1/2 cup Parmesan, freshly grated (I recommend Parmigiano-Reggiano)

Instructions

  1. Preheat Oven: Preheat your oven to 400°F (200°C) and line a large baking sheet with parchment paper to prevent sticking and ease cleanup.
  2. Prepare Green Beans: Place the trimmed green beans on the prepared baking sheet. Drizzle with olive oil, then toss together with the minced garlic, salt, and pepper ensuring all beans are evenly coated.
  3. Add Parmesan: Evenly sprinkle the freshly grated Parmesan cheese over the coated green beans, creating a nice cheesy layer.
  4. Roast Beans: Place the baking sheet in the preheated oven and roast for about 20 minutes. Cook until the green beans are fork-tender yet retain some crunch, and the Parmesan has melted and turned lightly browned and crispy.
  5. Finish and Serve: Remove the green beans from the oven and immediately squeeze fresh lemon juice over them. Garnish with chopped fresh parsley, and adjust seasoning with extra salt and pepper if desired. Serve hot for the best flavor and texture.

Notes

  • LEFTOVERS: Store any leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in the microwave for about 40 seconds or warm in the oven.
  • VEGAN OPTION: Omit the Parmesan cheese to make this dish vegan. To add a cheesy flavor without dairy, toss the roasted green beans with nutritional yeast or a dairy-free Parmesan alternative after cooking.
