Ingredients

Scale

Protein and Vegetables

  • 1 lb raw salmon (skin on)
  • 2 small heads broccoli florets (or other vegetable of choice)

Marinade and Seasoning

  • 2 tbsp extra virgin olive oil (EVOO) or avocado oil
  • 1 tsp garlic powder
  • ¼ cup low sodium soy sauce
  • 1 orange, juiced
  • ½ orange, zested
  • 2 cloves garlic, minced
  • ½ tbsp fresh ginger, grated (or ½ tsp dried ginger)
  • 2 tbsp honey

Garnish

  • Reserved sauce (¼ cup)
  • Sesame seeds
  • Green onions, diced

Instructions

  1. Preheat Oven and Prepare Pan: Preheat your oven to 425°F (220°C). Line a sheet pan with parchment paper or foil to ensure easy cleanup.
  2. Prepare Broccoli: Place the broccoli florets on one end of the sheet pan. Toss them with the cooking oil and garlic powder until evenly coated.
  3. Prepare Salmon: Place the salmon fillet skin side down on the opposite end of the sheet pan. Use a knife to score and partially cut the fillet into four equal servings without cutting through the skin to allow even cooking and easier serving.
  4. Make the Sauce: In a small bowl, whisk together the soy sauce, orange juice, orange zest, minced garlic, grated ginger, and honey until well combined.
  5. Marinate Salmon: Reserve ¼ cup of the sauce for garnishing later. Brush the remaining sauce generously onto the raw salmon fillets to coat them well.
  6. Bake: Place the sheet pan in the preheated oven and bake for 18-20 minutes, until salmon is cooked through and broccoli is tender and slightly caramelized.
  7. Finish and Serve: Once cooked, spoon the reserved ¼ cup of sauce over the salmon fillets. Garnish with sesame seeds and diced green onions for a burst of flavor and texture. Serve immediately.

Notes

  • You can substitute broccoli with other vegetables like asparagus, green beans, or Brussels sprouts.
  • Make sure not to overcook the salmon to keep it moist and tender.
  • For an extra kick, add some red pepper flakes to the sauce before brushing on the salmon.
  • Use fresh ginger for more vibrant flavor, but dried ginger works as a convenient substitute.
  • Adjust honey quantity based on desired sweetness.
