Instructions

  1. Preheat Oven: Preheat the oven to 425°F (220°C) and line a baking sheet with parchment paper to prevent sticking and ease cleanup.
  2. Boil Carrots: Boil the carrot rounds in salted water for 10–12 minutes until they are fork-tender but still firm enough to hold shape. Drain and let them cool slightly for easier handling.
  3. Smash Carrots: Place the carrots on the prepared baking sheet. Using the bottom of a glass or measuring cup, gently press each carrot round, flattening it to about half its original thickness, creating an even thickness for uniform roasting.
  4. Season: Drizzle olive oil evenly over the smashed carrots. Sprinkle garlic powder, smoked paprika, salt, and black pepper to taste. Finally, evenly distribute the grated Parmesan cheese over the top of each piece.
  5. Roast: Roast the carrots in the preheated oven for 20–25 minutes, flipping them halfway through to achieve crispy, golden-brown edges and a tender center.
  6. Garnish and Serve: Remove the carrots from the oven and garnish with freshly chopped parsley. Serve hot to enjoy the contrast of crispy edges and soft interiors.
