Instructions

  1. Preheat and prepare dish: Preheat your oven to 400°F (200°C) and lightly grease an 8×8-inch baking dish to prevent sticking.
  2. Prepare rice layer: In a bowl, combine cooked sushi rice with rice vinegar, sugar, and salt. Mix thoroughly until well seasoned. Evenly press the rice mixture into the bottom of the prepared baking dish to form a compact layer.
  3. Make salmon topping: In a separate bowl, mix together the flaked cooked salmon, mayonnaise, Sriracha sauce, soy sauce, and sesame oil until the mixture is creamy and well blended.
  4. Assemble the bake: Spread the spicy salmon mixture evenly over the rice layer in the baking dish. Sprinkle the shredded mozzarella cheese evenly on top of the salmon layer for a melty finish.
  5. Bake: Place the dish in the preheated oven and bake for 18-20 minutes, or until the cheese is melted, bubbly, and slightly golden. Remove from the oven and let it cool slightly to set.
