Ingredients

Scale

Pizza Dough

  • 16 oz. homemade pizza dough (can substitute store-bought dough)

Seasoning and Oil

  • 1 Tbsp extra-virgin olive oil
  • 3 tsp Italian seasonings, divided
  • 1 tsp kosher salt
  • ¼ tsp garlic powder
  • 1 tsp minced garlic

Cheeses

  • 8 oz. ricotta cheese
  • 1 cup shredded mozzarella cheese
  • ¼ cup grated Parmesan cheese

Vegetables

  • 10 oz. frozen chopped spinach, thawed
  • ¼ cup thinly sliced red onions

Instructions

  1. Preheat Oven: Preheat your oven to 460°F (238°C) to ensure it is hot enough for a crispy pizza crust and perfectly melted cheese.
  2. Prepare Dough: Roll out the pizza dough into a 15-16” round circle and place it on a piece of parchment paper to make transferring to the oven easier.
  3. Season Crust: In a small bowl, mix olive oil, 2 tsp Italian seasonings, kosher salt, and garlic powder. Brush this flavorful mixture around the outer 1-inch edge of the dough to create a seasoned crust.
  4. Mix Ricotta Topping: Combine the ricotta cheese with the remaining 1 tsp Italian seasonings and minced garlic in a bowl. Spread this mixture evenly over the center of the dough using an offset spatula, leaving the crust bare.
  5. Add Mozzarella: Sprinkle shredded mozzarella cheese evenly over the ricotta layer to add a creamy, melty texture.
  6. Prepare Spinach: Place the thawed spinach in a colander and press firmly to squeeze out excess water. Evenly distribute the drained spinach over the cheese layer on the pizza. Adjust the amount of spinach based on personal preference; this recipe uses about half of a 10-oz. package.
  7. Top with Onions and Parmesan: Scatter thinly sliced red onions and grated Parmesan cheese on top of the spinach layer for added flavor and texture.
  8. Bake: Transfer the pizza (on parchment) to a baking sheet or pizza stone and bake at 460°F for 12-13 minutes, or until the crust turns golden brown and the cheese is bubbly.

Notes

  • For a spicy kick, sprinkle a pinch of red pepper flakes on the pizza before baking or after baking according to taste.
  • Ensure thorough draining of spinach to avoid soggy pizza.
  • Use parchment paper for easy transfer and cleanup.
  • You can substitute fresh spinach if preferred; just sauté lightly and drain before using.
  • Adjust cheese amounts to your liking for more or less richness.
