Sweet Chili Chicken Wraps combine tender chicken tossed in a spicy-sweet chili sauce with fresh, crisp vegetables wrapped in soft tortillas, creating a flavorful and satisfying lunch option that’s quick to assemble and perfect for meal prep or a tasty midday treat.

Ingredients

Scale

Chicken and Sauce

  • 2 cups cooked chicken breast, shredded or diced
  • ½ cup sweet chili sauce

Vegetables

  • 1 cup shredded lettuce or mixed greens
  • ½ cup shredded carrots
  • ½ cup thinly sliced cucumber
  • ¼ cup thinly sliced red onion
  • ½ avocado, sliced (optional)

Extras

  • 4 large flour tortillas or whole wheat wraps
  • ¼ cup shredded mozzarella or cheddar cheese (optional)
  • 2 tbsp chopped fresh cilantro
  • 2 tbsp mayonnaise or Greek yogurt (optional for creaminess)
  • 1 tbsp fresh lime juice
  • Salt and pepper to taste

Instructions

  1. Prepare the Chicken: If not using leftover cooked chicken, cook chicken breasts by boiling, baking, or grilling until fully cooked. Allow to cool, then shred or dice into bite-sized pieces to ensure easy mixing and even distribution in the wrap.
  2. Toss Chicken with Sweet Chili Sauce: In a mixing bowl, combine the shredded or diced chicken with the sweet chili sauce. Stir thoroughly so every piece is coated evenly, providing that signature spicy-sweet flavor throughout the filling.
  3. Prepare the Veggies: Wash and shred the lettuce or mixed greens. Thinly slice the cucumber and red onion, and shred the carrots. If adding avocado, slice it just before assembling the wraps to avoid browning and preserve freshness.
  4. Assemble the Wraps: Lay each tortilla flat. Optionally, spread a thin layer of mayonnaise or Greek yogurt in the center for added creaminess. Layer on shredded lettuce, followed by the sweet chili chicken, carrots, cucumber, red onion, and avocado slices if using. Sprinkle with shredded cheese and fresh cilantro. Drizzle fresh lime juice on top and season with salt and pepper to taste.
  5. Roll and Serve: Fold the sides of the tortilla inward, then roll tightly from the bottom up to enclose all ingredients securely. Slice in half for serving or wrap individually with foil or plastic wrap for a convenient grab-and-go meal.

Notes

  • Use leftover cooked chicken or rotisserie chicken to save time.
  • Substitute flour tortillas with whole wheat or gluten-free wraps if preferred.
  • For a creamier texture, mayonnaise or Greek yogurt can be added, but they are optional.
  • Adjust the amount of sweet chili sauce depending on your spice tolerance.
  • Wraps are best eaten immediately but can be stored in the refrigerator for up to 24 hours.
  • Avocado adds creaminess and healthy fats but can be omitted or substituted with guacamole.
