  • 237 ml (1 cup) water, plus more to thin out the soup
  • 237 ml (1 cup) coconut milk

Instructions

  1. Sauté Aromatics: Heat the vegetable oil in a large saucepan over medium heat. Add the sliced red onion and minced garlic, sautéing until the onion becomes translucent and soft, releasing their aromas.
  2. Add Sweet Potatoes and Seasonings: Stir in the cubed sweet potatoes, thyme, and salt. Cook over high heat for 3-4 minutes, stirring occasionally, allowing the sweet potatoes to brown slightly to deepen flavor.
  3. Simmer: Pour in enough water to cover the sweet potatoes completely. Cover the saucepan with a lid and bring the mixture to a rolling boil. Once boiling, reduce heat to low and simmer gently for 10-15 minutes until the sweet potatoes are tender and easily pierced with a fork.
  4. Add Coconut Milk and Blend: Stir the coconut milk into the pot. Using an immersion blender, puree the soup in the saucepan until smooth. Alternatively, let the soup cool slightly and blend it in batches in a countertop blender until creamy.
